Directions

To use as a tea, 1 part burdock to 4 part water, wash and cut to desired size and boil in water for 10 minutes.

Curry Burdock Root Stew

  • 1 can chickpea, drain
  • 1/2 to 1 pound of burdock root, peeled and julienned or sliced or diced
  • 2 tbsp Curry powder
  • 2 tbsp All-purpose or Chicken seasoning
  • 1 ½ tsp Salt Or salt to your liking
  • Pimento 
  • 4 bay leaves
  • 4 cloves
  • 3 Cloves garlic Crushed
  • 1 Medium onion Chopped
  • Sprig of fresh thyme
  • 2 Medium carrots Chopped
  • 1 Small potato Diced
  • 1 ½ tsp Freshly grated ginger
  • 1 tsp Fresh Turmeric, grated
  • 1 Small scotch bonnet pepper 
  • 3 tbsp Cooking oil

 

In a bowl combine all prepared ingredients except oil

Let marinate for 20 minutes minimum. 

Heat your pot on medium heat

Add marinated food to pot and cover

Stir food every few minutes 

Cook until everything in tender

Serve over white rice
